- 1 small piece grated ginger
- ½ tsp cumin seeds
- ¼ tsp fennel seeds
- ¼ tsp mustard seeds
- Pinch of asafoetida
Method
- Heat mustard oil in a pan.
- Add mustard seeds, cumin seeds, fennel seeds, asafoetida, and green chilies. Allow them to splutter.
- Add ginger and garlic and sauté until aromatic.
- Stir in the chopped tomatoes and cook until soft.
- Add chopped brinjal, methi leaves, and dill leaves.
- Mix well and cover the pan.
- Cook over medium heat until the brinjal becomes soft and fully cooked.
- Serve hot with whole-grain roti.
