Kaddu Dal Sabzi – A Healthy Bottle Gourd and Chana Dal Curry

Kaddu Dal Sabzi is a comforting one-pot dish that combines bottle gourd (lauki) with split Bengal gram (chana dal). Instead of preparing dal and vegetables separately, this recipe brings both together in a nutritious and satisfying meal.

Ingredients
- 1 bottle gourd (peeled and chopped)

- 2 green chilies
- 1 bay leaf
- 1 tbsp grated coconut
- 1 tsp black pepper powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- Curry leaves
- Fresh coriander leaves
- Salt to taste
Method
- Heat oil in a pan.
- Add Panch Phoran, bay leaf, and curry leaves. Let them splutter.
- Add onions and green chilies and sauté until soft.
- Stir in bottle gourd, soaked chana dal, tomatoes, turmeric, coriander powder, pepper powder, and salt.
- Mix everything thoroughly.
- Add sufficient water and cover the pan.
- Cook until both the bottle gourd and chana dal become tender.
- Garnish with grated coconut and fresh coriander before serving.
